Coconut Milk Chia Seed Pudding with Almond Butter and Berries

As I have been on the Elimination Diet (albeit only a month), certain things have been my go-to so I don’t have to re-invent the wheel every time I get hungry. This Chia Seed Pudding has been one of my favorite breakfast recipes. It’s very simple to make the night before with minimal fuss and it tastes absolutely delicious!

Coconut Milk Chia Seed Pudding with Almond Butter and Fruit

A fiber rich delicious breakfast or dessert

Ingredients
  

  • 1/4 cup chia seeds
  • 1 1/2 cup coconut milk with cream removed Or you can blend the cream into the milk for more creaminess.
  • 1/2 tsp cinnamon
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup or 1 tbsp honey
  • 1/2 cup whipped cream

Method
 

  1. In a glass container with a lid, combine chia seeds, milk, maple syrup, vanilla, and cinnamon. Mix well!
  2. Put in the fridge overnight or at least 3 hours to allow the chia to gel and expand.
  3. After the mixture has gelled, place in a serving bowl and top with a tablespoon or two of almond butter, your choice of fruit, and whipped cream. (I really enjoy frozen berries!)
  4. Enjoy!

Notes

  • You are welcome to use your choice of milk, as long as the liquid amounts stay the same.
  • This recipe is adapted for the Elimination Diet, which is a short-term diet designed to reduce inflammation and uncover hidden intolerances.
