Sausage and Egg Hash

This is another recipe I turn to when I’m not sure what to eat. It’s simple, easy, and fuels me up nicely.

I really like incorporating eggs into meals because of the protein and nutrients in them. Egg yolks are only second to breastmilk in nutrients and digestibility.

Sausage and Egg Hash

Total Time 30 minutes
Servings: 2 people
Course: Breakfast, Lunch

Ingredients
  

  • 1 lbs ground sausage
  • 1 large potato
  • 6 eggs
  • 1/4 cup milk
  • 1/2 tsp thyme
  • 1/2 tsp parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup shredded cheese Any cheese you prefer. I really like Gouda.

Method
 

  1. Brown sausage in a skillet.
  2. Grate potato and add to sausage.
  3. Whisk eggs and milk together and pour into skillet.
  4. Add thyme, parsley, salt and pepper to cooking hash mixture and stir.
  5. Once eggs are completely cooked, remove from heat and serve with shredded cheese.

Notes

  • Using uncooked potatoes will take longer to cook than if you use baked potatoes.
  • If I have ranch dressing on hand, I’ll drizzle that over my plate.
