Soaked Breakfast Porridge
I really like this recipe for a simple, tasty breakfast. In soaking the oats, the phytic acid (the plant’s chemical shield) is neutralized. This allows your body to get the fullest nutrients from the grain. I used to not like oatmeal because it made me feel “gummed up”. But now that I’ve found this recipe, it’s one of my favorites!

Method
- Mix warm water, whey, and oats in a glass container and cover. I use a pint jar.
- Let it soak for at least 6 hours or overnight in a warm place.
- In the morning, boil the cold water and salt.
- Add soaked oats mixture and cook for 3-5 minutes, stirring to prevent scorching.
- Remove from heat when thickened and serve.
Notes
- I often add sour cream, maple syrup, cinnamon, and vanilla extract to my bowl.
- Dried fruit that has been soaked overnight is also yummy!
- This recipe doesn’t keep very well, but you can add water, milk or butter to heat again if needed.
- You can try other grains as well, such as einkorn, spelt, or barley.
